Theakston's Coopers
Tuesday only
We are fortunate once again to have a visit from T & R Theakston’s master cooper, Jonathan Manby and is joined by apprentice cooper Euan Findlay this year. T & R Theakston are one of the few British brewers who still employ a full-time coopers. Although their beers are no longer delivered in oak casks, some of their beers are matured in the wood. Jonathan was trained by master brewer and cooper, Clive Hollis, and is one of the few remaining coopers in the country. Everyone who has watched Jonathan’s demonstration of his craft has enjoyed watching him create casks with tools that haven’t changed in centuries. If you didn’t catch it last year, then make sure that you do not miss the chance to observe and marvel at his skill in the north tent. On Tuesday only

The Riva Wood Fired Pizza way of working is based on one simple rule, authenticity. This is why all of the pizza ovens we use to cook in are traditional wood fired ovens and manufactured in Italy. The type '00' pizza flour we use to produce our pizza dough fresh every day is produced in Italy. The tomatoes we use for our Neapolitan sauce are produced in Italy. We are a beef (21 day aged beef on the bone) farm based in a little village called Winwick, about 20 minutes from Peterborough. We cook our home reared gourmet beef burgers at the top food markets in London - Partridges in Chelsea, Southbank, Covent Garden, Bloomsbury and Queen Mary. We use fresh locally baked rolls and serve our burgers with a mild cheddar cheese and our home cured streaky bacon alongside fresh salad leaves, gherkins and a variety of sauces all displayed in large wooden bowls. This year we are offering a vegetarian option.
